Ingredients

  • ½ seedless watermelon
  • 1 (5-oz) pkg arugula
  • ½ red onion, thinly sliced
  • 1 English cucumber, thinly sliced
  • 1 (0.5-oz) pkg fresh basil, separated into leaves
  • 1 (0.5-oz) pkg fresh mint, separated into leaves
  • 2 Tbsp fresh lime juice
  • 1 Tbsp honey
  • ½ tsp Dijon mustard
  • ¼ tsp garlic powder
  • ¼ tsp ground cumin
  • ¼ cup olive oil
  • 1 cup crumbled feta cheese

Instructions

  1. Cut watermelon into ½-inch cubes, and place in a large bowl. Add arugula, onion, cucumber, basil, and mint; gently toss.
  2. Meanwhile whisk together lime juice, honey, mustard, garlic powder, and cumin in a small bowl. Gradually whisk in oil until blended.
  3. Add desired amount of dressing to watermelon salad; gently toss. Sprinkle with cheese; season with salt and pepper, if desired. Serve immediately.
