Watermelon and Arugula Salad

Ingredients
- ½ seedless watermelon
- 1 (5-oz) pkg arugula
- ½ red onion, thinly sliced
- 1 English cucumber, thinly sliced
- 1 (0.5-oz) pkg fresh basil, separated into leaves
- 1 (0.5-oz) pkg fresh mint, separated into leaves
- 2 Tbsp fresh lime juice
- 1 Tbsp honey
- ½ tsp Dijon mustard
- ¼ tsp garlic powder
- ¼ tsp ground cumin
- ¼ cup olive oil
- 1 cup crumbled feta cheese
Instructions
- Cut watermelon into ½-inch cubes, and place in a large bowl. Add arugula, onion, cucumber, basil, and mint; gently toss.
- Meanwhile whisk together lime juice, honey, mustard, garlic powder, and cumin in a small bowl. Gradually whisk in oil until blended.
- Add desired amount of dressing to watermelon salad; gently toss. Sprinkle with cheese; season with salt and pepper, if desired. Serve immediately.
