Sausage and Vegetable Strata

Ingredients

  • ½ (16-oz) pkg ground pork sausage
  • ½ zucchini, cut into ¼-inch-thick rounds
  • ½ (8-oz) pkg sliced mushrooms
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 6 large eggs, lightly beaten
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 400°F. Cook sausage, zucchini, mushrooms, and garlic in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until sausage is browned and crumbly. Drain.
  2. Stir together sausage mixture, eggs, salt, and pepper in a large bowl until blended. Transfer to a lightly greased 8-inch baking dish.
  3. Bake 25 minutes or until center is set.

  • 1 (9-oz) pkg frozen artichoke hearts, thawed
  • 1½ Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook artichokes in hot oil in a large skillet over medium-high heat 6 minutes, stirring occasionally, or until browned. Stir in lemon juice, salt, and pepper.
