Sausage and Vegetable Strata
Skillet Artichoke HeartsIngredients
- ½ (16-oz) pkg ground pork sausage
- ½ zucchini, cut into ¼-inch-thick rounds
- ½ (8-oz) pkg sliced mushrooms
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 6 large eggs, lightly beaten
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 400°F. Cook sausage, zucchini, mushrooms, and garlic in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until sausage is browned and crumbly. Drain.
- Stir together sausage mixture, eggs, salt, and pepper in a large bowl until blended. Transfer to a lightly greased 8-inch baking dish.
- Bake 25 minutes or until center is set.
Side Dish Ingredients
- 1 (9-oz) pkg frozen artichoke hearts, thawed
- 1½ Tbsp olive oil
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook artichokes in hot oil in a large skillet over medium-high heat 6 minutes, stirring occasionally, or until browned. Stir in lemon juice, salt, and pepper.
