Zucchini-Beef Taco Bowls
Homemade Ranch Dressing
Ingredients
- 1½ lb ground beef
- 3 cloves garlic, minced
- 3 zucchini, chopped
- 3 Tbsp olive oil
- 3 Tbsp taco seasoning
- ½ cup water
- 8 cups torn Bibb lettuce
- 2 avocados, diced
- ¼ cup sliced radishes (optional)
Instructions
- Cook beef, garlic, and zucchini in hot oil in a large skillet over medium heat, stirring often, until beef is browned and crumbly.
- Sprinkle with taco seasoning; stir in water. Simmer 5 minutes or until slightly thickened.
- Line 6 bowls with lettuce; top with beef mixture, avocado, and, if desired, radish slices. Drizzle with Homemade Ranch Dressing recipe before serving.
Side Dish Ingredients
- ½ cup mayonnaise
- 1 Tbsp chopped green onion
- ½ Tbsp flat-leaf parsley leaves (optional)
- ¼ tsp garlic powder
- ¼ tsp salt
- ½ tsp pepper
- 1 tsp fresh lemon juice
Side Dish Instructions
- Process all ingredients in a blender or food processor, scraping sides as needed. Store dressing in refrigerator.
