Chili Chicken
Mashed Cauliflower and Skillet Garlic ZucchiniIngredients
- 2 Tbsp olive oil
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp chili powder
- 1 Tbsp ground cumin
- 1 clove garlic, chopped
- ½ tsp salt
- 6 (5-oz) boneless, skinless chicken breasts
- ½ cup sliced green bell pepper
- ¼ cup diced red onion
- ½ cup chopped tomato
- 1½ cups shredded Cheddar cheese
Instructions
- Preheat oven to 400°F. Whisk together oil, cilantro, chili powder, cumin, garlic, and salt in a large bowl; add chicken, and toss.
- Place chicken on a foil-lined baking sheet. Place green bell pepper, onion, and tomato over each chicken breast.
- Bake 30 minutes or until chicken is done. Remove from oven, and sprinkle with cheese; bake 1 minute longer or until cheese is melted.
Side Dish Ingredients
- 6 cups cauliflower florets, coarsely chopped
- ½ cup water
- ¼ cup butter
- ¼ cup freshly grated Parmesan cheese
- ½ tsp garlic salt
- ½ tsp pepper, divided
- 2 Tbsp olive oil
- 2 zucchini, thinly sliced
- 1 Tbsp minced garlic
- ¼ tsp salt
Side Dish Instructions
- Place cauliflower and water in a microwave-safe dish. Cover with plastic wrap and microwave at HIGH 12 to 15 minutes, stirring occasionally, until cauliflower is tender.
- Mash cauliflower with butter and cheese; add garlic salt and ¼ tsp pepper.
- Sauté zucchini and garlic in hot oil in a large skillet over medium-high heat, stirring often, 7 to 8 minutes or until lightly browned.
- Sprinkle with salt and ¼ tsp pepper; cook 2 minutes or until tender.
