Chili Chicken

Mashed Cauliflower and Skillet Garlic Zucchini

Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 clove garlic, chopped
  • ½ tsp salt
  • 6 (5-oz) boneless, skinless chicken breasts
  • ½ cup sliced green bell pepper
  • ¼ cup diced red onion
  • ½ cup chopped tomato
  • 1½ cups shredded Cheddar cheese

Instructions

  1. Preheat oven to 400°F. Whisk together oil, cilantro, chili powder, cumin, garlic, and salt in a large bowl; add chicken, and toss.
  2. Place chicken on a foil-lined baking sheet. Place green bell pepper, onion, and tomato over each chicken breast.
  3. Bake 30 minutes or until chicken is done. Remove from oven, and sprinkle with cheese; bake 1 minute longer or until cheese is melted.

  • 6 cups cauliflower florets, coarsely chopped
  • ½ cup water
  • ¼ cup butter
  • ¼ cup freshly grated Parmesan cheese
  • ½ tsp garlic salt
  • ½ tsp pepper, divided
  • 2 Tbsp olive oil
  • 2 zucchini, thinly sliced
  • 1 Tbsp minced garlic
  • ¼ tsp salt

Side Dish Instructions

  1. Place cauliflower and water in a microwave-safe dish. Cover with plastic wrap and microwave at HIGH 12 to 15 minutes, stirring occasionally, until cauliflower is tender.
  2. Mash cauliflower with butter and cheese; add garlic salt and ¼ tsp pepper.
  3. Sauté zucchini and garlic in hot oil in a large skillet over medium-high heat, stirring often, 7 to 8 minutes or until lightly browned.
  4. Sprinkle with salt and ¼ tsp pepper; cook 2 minutes or until tender.
