Italian Beef Florentine
Roasted Asparagus with Mustard VinaigretteIngredients
- 1½ lb ground beef
- 1 tsp Italian seasoning
- 1 (16-oz) jar Alfredo sauce
- 1 (10-oz) pkg spinach
- ¼ cup shaved Parmesan cheese
Instructions
- Combine beef and Italian seasoning; shape mixture into 6 patties. Cook patties in a large skillet over medium-high heat 4 to 5 minutes per side or until no longer pink.
- Meanwhile, heat Alfredo sauce in a saucepan over medium heat; gradually add spinach, stirring constantly, until wilted.
- Serve spinach mixture over patties; top with cheese.

- 1½ lb asparagus, trimmed
- ¼ cup extra virgin olive oil, divided
- ¾ tsp salt, divided
- ½ tsp pepper
- 2 Tbsp coarse ground mustard
- 1 Tbsp red wine vinegar
Side Dish Instructions
- Preheat oven to 400°F. Place asparagus in a single layer on a rimmed baking sheet. Drizzle with 1 Tbsp oil, and sprinkle with ½ tsp each salt and pepper; toss.
- Bake 10 minutes or until tender.
- Combine mustard, vinegar, and ¼ tsp salt in a small bowl; whisk until blended. Slowly whisk in 3 Tbsp oil. Drizzle vinaigrette over asparagus.
