Roasted Asparagus with Mustard Vinaigrette

Ingredients

  • 1½ lb ground beef
  • 1 tsp Italian seasoning
  • 1 (16-oz) jar Alfredo sauce
  • 1 (10-oz) pkg spinach
  • ¼ cup shaved Parmesan cheese

Instructions

  1. Combine beef and Italian seasoning; shape mixture into 6 patties. Cook patties in a large skillet over medium-high heat 4 to 5 minutes per side or until no longer pink.
  2. Meanwhile, heat Alfredo sauce in a saucepan over medium heat; gradually add spinach, stirring constantly, until wilted.
  3. Serve spinach mixture over patties; top with cheese.

  • 1½ lb asparagus, trimmed
  • ¼ cup extra virgin olive oil, divided
  • ¾ tsp salt, divided
  • ½ tsp pepper
  • 2 Tbsp coarse ground mustard
  • 1 Tbsp red wine vinegar

Side Dish Instructions

  1. Preheat oven to 400°F. Place asparagus in a single layer on a rimmed baking sheet. Drizzle with 1 Tbsp oil, and sprinkle with ½ tsp each salt and pepper; toss.
  2. Bake 10 minutes or until tender.
  3. Combine mustard, vinegar, and ¼ tsp salt in a small bowl; whisk until blended. Slowly whisk in 3 Tbsp oil. Drizzle vinaigrette over asparagus.
