Loaded Cauliflower-Barbecue Chicken Casserole
Garlicky Roasted Asparagus
Ingredients
- 10 slices bacon, chopped
- 1½ lb boneless, skinless chicken breasts
- 1 (12-oz) pkg frozen mashed cauliflower
- ⅓ cup sugar-free barbecue sauce
- 1 cup shredded Cheddar cheese
Instructions
- Preheat oven to 400°F. Cook bacon in a large skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
- Cut chicken into bite-size pieces. Cook chicken in hot drippings in skillet over medium heat 3 to 5 minutes per side or until done.
- Meanwhile, prepare cauliflower according to package directions. Spread cauliflower in a greased 13- x 9-inch baking dish; top with chicken, barbecue sauce, cheese, and bacon.
- Bake 20 minutes or until thoroughly heated.

- 2 lb asparagus, trimmed
- 3 Tbsp olive oil
- ½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
- Bake 18 minutes or until asparagus is tender and lightly charred.
