Peanut-Vegetable Noodles
Ingredients
- 1 (14-oz) pkg rice noodles
- 1 (12-oz) pkg frozen shelled edamame
- 1 (10-oz) pkg tricolor coleslaw
- 1 bell pepper (any color), thinly sliced
- 3 Tbsp olive oil
- 1 (11.5-oz) bottle peanut sauce
- 1 cup roasted, lightly salted peanuts
- ½ cup chopped fresh cilantro
- ¼ cup lime juice
Instructions
- Cook noodles according to package directions.
- Meanwhile, cook edamame, coleslaw, and bell pepper in hot oil in a large skillet over medium-high heat 8 minutes or until lightly browned and tender. Stir in peanut sauce and peanuts; cook 3 minutes or until thoroughly heated.
- Stir in noodles until coated. Toss with cilantro and lime juice.
