Peach Grilled Cheese Croissants

Ingredients

  • 1 cup peach preserves
  • 6 croissants, halved lengthwise
  • 1 tsp Italian seasoning
  • 1 (8-oz) block white Cheddar cheese, shredded
  • 2 Tbsp olive oil

Instructions

  1. Spread preserves on croissant bottoms; sprinkle with Italian seasoning. Top with cheese; add croissant tops.
  2. Cook sandwiches, in batches, in 1 Tbsp hot oil per batch in a large skillet over medium heat 5 minutes per side or until cheese is melted and bread is crisp, pressing each sandwich with a spatula as it cooks.

  • 2 (12-oz) pkg frozen mixed vegetables (carrots, green beans, corn, and peas)
  • 2 Tbsp olive oil
  • 1½ tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook vegetables in hot oil in a large skillet over medium-high heat 8 minutes or until lightly browned and tender. Stir in Italian seasoning, salt, and pepper.
