Waffles with Smashed Avocado and Strawberries

Ingredients

  • 8 frozen whole-grain waffles, toasted
  • ¼ cup chopped pecans
  • 1 avocado
  • ¼ tsp salt
  • 2 cups sliced strawberries
  • ½ cup thinly sliced fresh basil

Instructions

  1. Cook waffles according to package directions.
  2. Toast nuts in a dry skillet 2 to 3 minutes or until fragrant.
  3. Mash avocado and salt in a bowl until smooth. Spread over waffles. Top with strawberries and pecans; sprinkle with basil.

  • ½ (24-oz) carton less-sugar vanilla Greek yogurt (see Note)

Side Dish Instructions

  1. Serve yogurt alongside waffles.
