Fried Chicken Salad

Ingredients

  • 1½ (15-oz) pkg frozen lightly breaded chicken breast strips
  • ½ cup barbecue sauce
  • ½ cup refrigerated yogurt Ranch dressing
  • 3 heads Bibb lettuce, torn (or use 3 [6-oz] pkg butter lettuce salad)
  • 3 Roma tomatoes, coarsely chopped
  • 1 cucumber, sliced or chopped
  • ¾ cup shredded reduced-fat Cheddar cheese
  • 3 Tbsp chopped pecans
  • ½ (5-oz) pkg seasoned croutons

Instructions

  1. Cook chicken strips according to package directions. Cut into bite-size pieces.
  2. Stir together barbecue sauce and Ranch dressing; set aside.
  3. Toss together lettuce, tomatoes, cucumber, cheese, and nuts in a large bowl; drizzle with dressing, and toss again.
  4. Add chicken and croutons; toss.
