Alfredo Vegetable Pasta

Ingredients
- 12 oz rigatoni (or use penne pasta)
- 1 (12-oz) pkg frozen California-style vegetables (broccoli, cauliflower, carrots)
- 1 (12-oz) pkg frozen green peas
- 2 Tbsp olive oil
- 1 (16-oz) jar Alfredo sauce
- 1 cup shredded Parmesan cheese
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook vegetables and peas in hot oil in a large skillet over medium-high heat 8 minutes or until lightly browned and tender, adding water, if needed, to prevent sticking.
- Reduce heat to medium; add sauce, and cook 3 minutes or until thoroughly heated. Stir in pasta until coated. Sprinkle with cheese.
