Creamy Cilantro-Lime Rice

Ingredients

  • 2 Tbsp butter
  • 1 cup finely chopped onion
  • 2 cups long-grain white rice
  • 1 (32-oz) carton chicken broth
  • 2 (4-oz) cans diced green chiles, drained
  • ½ cup sour cream
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp lime zest

Instructions

  1. Melt butter in a large saucepan over medium heat. Add onion; cook 5 minutes, stirring occasionally. Stir in rice, and cook 2 minutes. Add broth; bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
  2. Stir in chiles, sour cream, cilantro, and lime zest until blended.
