Creamy Cilantro-Lime Rice

Ingredients
- 2 Tbsp butter
- 1 cup finely chopped onion
- 2 cups long-grain white rice
- 1 (32-oz) carton chicken broth
- 2 (4-oz) cans diced green chiles, drained
- ½ cup sour cream
- ¼ cup chopped fresh cilantro
- 1 Tbsp lime zest
Instructions
- Melt butter in a large saucepan over medium heat. Add onion; cook 5 minutes, stirring occasionally. Stir in rice, and cook 2 minutes. Add broth; bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
- Stir in chiles, sour cream, cilantro, and lime zest until blended.
