Ingredients

  • ½ lb Mexican chorizo sausage
  • ½ cup chopped onion
  • 1 (12-oz) round queso fresco cheese, shredded
  • 1 (8-oz) block Monterey Jack cheese, shredded
  • 1 cup pico de gallo
  • 2 Tbsp fresh cilantro leaves
  • 1 (10-oz) pkg tortilla chips

Instructions

  1. Preheat oven to 400°F. Cook sausage and onion in a small ovenproof skillet over medium heat until sausage is browned and crumbly; drain and return all but ¼ cup chorizo mixture to skillet.
  2. Sprinkle cheeses over chorizo mixture in skillet. Bake 10 minutes or until hot and bubbly. Sprinkle with reserved chorizo mixture, pico de gallo, and cilantro. Serve immediately with tortilla chips.
