Kendall-Jackson Vintner's Reserve Chardonnay

Ingredients

  • 2 oranges 
  • 1½ lb cod fillets 
  • ¾ tsp ground cumin
  • ¾ tsp dried thyme 
  • ¼ tsp pepper
  • ¼ cup butter, melted
  • ⅓ cup olive oil 
  • 3 cloves garlic, minced 
  • 1 (8-oz) jar pitted green olives

Instructions

  1. Preheat oven to 400°F. Grate 2 Tbsp zest and squeeze ⅓ cup juice from 1 orange. Cut remaining orange into slices.
  2. Arrange fish in a greased 13- x 9-inch baking dish; sprinkle with cumin, thyme, and pepper. Combine orange zest, orange juice, butter, oil, and garlic; pour mixture over fish.
  3. Top fish with orange slices and olives. Bake 12 to 15 minutes or until fish flakes with a fork.
