Kendall-Jackson Vintner's Reserve Chardonnay
Ingredients
- 2 oranges
- 1½ lb cod fillets
- ¾ tsp ground cumin
- ¾ tsp dried thyme
- ¼ tsp pepper
- ¼ cup butter, melted
- ⅓ cup olive oil
- 3 cloves garlic, minced
- 1 (8-oz) jar pitted green olives
Instructions
- Preheat oven to 400°F. Grate 2 Tbsp zest and squeeze ⅓ cup juice from 1 orange. Cut remaining orange into slices.
- Arrange fish in a greased 13- x 9-inch baking dish; sprinkle with cumin, thyme, and pepper. Combine orange zest, orange juice, butter, oil, and garlic; pour mixture over fish.
- Top fish with orange slices and olives. Bake 12 to 15 minutes or until fish flakes with a fork.
