Steak Bites with Mushrooms and Sweet Potatoes

Ingredients
- 2 lb flank steak
- 2 lb sweet potatoes
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 (16-oz) pkg sliced mushrooms
- 1 tsp ground ginger
- 2 Tbsp olive oil, divided
- ¼ cup balsamic vinegar
- 2 Tbsp butter
- 3 cloves garlic, minced
Instructions
- Cut steak and potatoes into 1-inch cubes; sprinkle steak with ¼ tsp each salt and pepper.
- Cook potatoes, mushrooms, ginger, and ¼ tsp each salt and pepper in 1 Tbsp hot oil in a large skillet over medium-high heat 8 to 10 minutes or until lightly browned and tender. Remove potato mixture from skillet; keep warm.
- Cook steak in 1 Tbsp hot oil in same skillet over medium-high heat 5 minutes. Add potatoes, vinegar, butter, and garlic to skillet; cook until garlic is fragrant and steak is to desired doneness.
