Steak Bites with Mushrooms and Sweet Potatoes

Ingredients

  • 2 lb flank steak
  • 2 lb sweet potatoes
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1 (16-oz) pkg sliced mushrooms 
  • 1 tsp ground ginger
  • 2 Tbsp olive oil, divided
  • ¼ cup balsamic vinegar 
  • 2 Tbsp butter 
  • 3 cloves garlic, minced

Instructions

  1. Cut steak and potatoes into 1-inch cubes; sprinkle steak with ¼ tsp each salt and pepper.
  2. Cook potatoes, mushrooms, ginger, and ¼ tsp each salt and pepper in 1 Tbsp hot oil in a large skillet over medium-high heat 8 to 10 minutes or until lightly browned and tender. Remove potato mixture from skillet; keep warm.
  3. Cook steak in 1 Tbsp hot oil in same skillet over medium-high heat 5 minutes. Add potatoes, vinegar, butter, and garlic to skillet; cook until garlic is fragrant and steak is to desired doneness.
