Lemon-Tahini Grilled Salmon

Ingredients

  • 1 lemon
  • ¼ cup tahini (sesame seed paste)
  • 2 cloves garlic, minced
  • 1 tsp kosher salt, divided
  • 3 Tbsp cold water
  • 6 (6-oz) salmon fillets
  • 2 Tbsp olive oil
  • ½ tsp pepper
  • ½ tsp crushed red pepper

Instructions

  1. Preheat grill to medium-high heat. Grate 2 tsp zest and squeeze 2 Tbsp juice from lemon. Whisk together tahini, garlic, lemon zest, lemon juice, and ½ tsp salt in a small bowl. Gradually whisk in water until smooth and creamy.
  2. Drizzle salmon with oil; sprinkle with ½ tsp each salt and pepper. Grill 4 to 5 minutes per side or until fish flakes with a fork.
  3. Drizzle tahini sauce on salmon. Sprinkle with red pepper.

  • 2 Tbsp olive oil
  • 2 pints grape tomatoes, halved
  • ½ cup finely chopped fresh parsley
  • ¼ cup chopped fresh dill
  • ½ cup crumbled feta cheese
  • 3 cloves garlic, minced
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions; stir in oil. Toss with remaining ingredients in a bowl.
