Caprese Pesto Couscous

Ingredients

  • 2 cups Israeli (pearl) couscous (preferably whole wheat)
  • ⅔ cup pesto
  • 1 (8-oz) pkg fresh mozzarella cheese pearls
  • 2 pints grape tomatoes, halved
  • 2 (0.5-oz) pkg fresh basil, chopped
  • 3 Tbsp balsamic glaze 

Instructions

  1. Cook couscous according to package directions; rinse under cold water to cool. Stir together couscous and pesto in a bowl.
  2. Add cheese, tomatoes, and basil; toss. Drizzle with balsamic glaze just before serving.
