Caprese Pesto Couscous
Chilled Green Grapes
Ingredients
- 2 cups Israeli (pearl) couscous (preferably whole wheat)
- ⅔ cup pesto
- 1 (8-oz) pkg fresh mozzarella cheese pearls
- 2 pints grape tomatoes, halved
- 2 (0.5-oz) pkg fresh basil, chopped
- 3 Tbsp balsamic glaze
Instructions
- Cook couscous according to package directions; rinse under cold water to cool. Stir together couscous and pesto in a bowl.
- Add cheese, tomatoes, and basil; toss. Drizzle with balsamic glaze just before serving.
