Chicken Sausage and Broccoli Rabe Pizza

Ingredients

  • ¾ cup crushed tomatoes
  • 1 (0.5-oz) pkg fresh basil, torn
  • 2 cloves garlic, minced
  • ½ tsp freshly ground pepper
  • 1 (1-lb) ball bakery pizza dough
  • 1 Tbsp olive oil
  • ½ lb broccoli rabe, coarsely chopped
  • ½ cup water
  • 2 (3-oz) links fully-cooked Italian chicken sausage links, thinly sliced
  • 1½ cup freshly shredded fontina cheese (or use mozzarella)
  • ¼ tsp crushed red pepper (optional)

Instructions

  1. Preheat oven to 450°F. Combine tomatoes, basil, garlic, and pepper in a bowl.
  2. Roll out pizza dough into a 16-inch round on a greased baking sheet; prick dough all over with a fork. Brush with oil; bake 8 minutes.
  3. Meanwhile, place broccoli rabe in a microwave-safe dish with ½ cup water; cover dish with plastic wrap, and vent one corner. Microwave at HIGH 4 to 5 minutes or until tender; drain.
  4. Top pizza with tomato sauce, sausage, steamed broccoli rabe, and cheese. Bake 12 to 15 minutes or until thoroughly heated and golden.
  5. Sprinkle with red pepper, if using. Cut into wedges to serve.

  • 3 large tomatoes, cut into wedges 
  • 3 cups baby arugula
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar

Side Dish Instructions

  1.  Toss together all ingredients in a large bowl.
