Ingredients

  • 1 cup whole wheat panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 1 Tbsp Italian seasoning
  • 1½ lb boneless pork chops, well trimmed
  • 3 Tbsp olive oil

Instructions

  1. Combine breadcrumbs, cheese, and Italian seasoning in a shallow dish; dredge pork in mixture, pressing to coat.
  2. Cook pork, in batches, in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done.

  • ¾ lb zucchini, sliced
  • ¾ lb yellow squash, sliced
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 3 slices natural, uncured bacon
  • 3 cups lima beans
  • 2 cups low-sodium chicken broth

Side Dish Instructions

  1. Sauté zucchini, yellow squash, and garlic in hot oil in a large nonstick skillet 6 to 8 minutes or until tender.
  2. Meanwhile, cook bacon in a large saucepan over medium heat 4 minutes or until crisp. drain, reserving 1 Tbsp drippings in pan. Crumble bacon.
  3. Add lima beans, broth, and bacon to hot drippings; cover and simmer 20 minutes or until beans are tender. Serve with a slotted spoon.
