Ingredients
- 1 cup whole wheat panko breadcrumbs
- ½ cup freshly grated Parmesan cheese
- 1 Tbsp Italian seasoning
- 1½ lb boneless pork chops, well trimmed
- 3 Tbsp olive oil
Instructions
- Combine breadcrumbs, cheese, and Italian seasoning in a shallow dish; dredge pork in mixture, pressing to coat.
- Cook pork, in batches, in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done.
Side Dish Ingredients
- ¾ lb zucchini, sliced
- ¾ lb yellow squash, sliced
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 3 slices natural, uncured bacon
- 3 cups lima beans
- 2 cups low-sodium chicken broth
Side Dish Instructions
- Sauté zucchini, yellow squash, and garlic in hot oil in a large nonstick skillet 6 to 8 minutes or until tender.
- Meanwhile, cook bacon in a large saucepan over medium heat 4 minutes or until crisp. drain, reserving 1 Tbsp drippings in pan. Crumble bacon.
- Add lima beans, broth, and bacon to hot drippings; cover and simmer 20 minutes or until beans are tender. Serve with a slotted spoon.
