Brown Rice and Broccoli

Ingredients
- 3 cloves garlic, minced
- ⅓ cup olive oil
- ⅓ cup orange juice
- ⅓ cup lime juice
- 2 tsp ground cumin
- 1 tsp dried oregano
- 2 lb peeled and deveined, large raw shrimp
- ¼ cup chopped fresh cilantro
Instructions
- Whisk together garlic, oil, orange juice, lime juice, cumin, and oregano in a large bowl. Reserve ½ cup mixture in a small bowl.
- Add shrimp to large bowl of marinade; toss and let stand 10 minutes.
- Drain shrimp, discarding marinade. Cook shrimp in a large nonstick skillet over medium-high heat 2 minutes, stirring occasionally, until shrimp just begin to turn pink.
- Add reserved ½ cup marinade to skillet; cook 1 minute or until shrimp turn pink. Remove from heat, and sprinkle with cilantro.

- 3 (3.5-oz) pouches boil-in-bag brown rice
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
- 1½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook rice and broccoli according to package directions.
- Toss together broccoli, oil, garlic powder, salt, and pepper.
