Ingredients

  • 3 cloves garlic, minced
  • ⅓ cup olive oil
  • ⅓ cup orange juice
  • ⅓ cup lime juice
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2 lb peeled and deveined, large raw shrimp
  • ¼ cup chopped fresh cilantro

Instructions

  1. Whisk together garlic, oil, orange juice, lime juice, cumin, and oregano in a large bowl. Reserve ½ cup mixture in a small bowl.
  2. Add shrimp to large bowl of marinade; toss and let stand 10 minutes.
  3. Drain shrimp, discarding marinade. Cook shrimp in a large nonstick skillet over medium-high heat 2 minutes, stirring occasionally, until shrimp just begin to turn pink.
  4. Add reserved ½ cup marinade to skillet; cook 1 minute or until shrimp turn pink. Remove from heat, and sprinkle with cilantro.

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil
  • 1½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice and broccoli according to package directions.
  2. Toss together broccoli, oil, garlic powder, salt, and pepper.
