Skillet Sausage and Summer Squash

Ingredients

  • 1 (14-oz) pkg smoked sausage, sliced
  • 3 Tbsp olive oil, divided
  • 2 zucchini, sliced
  • 2 yellow squash, sliced
  • 1 red onion, sliced
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup chopped fresh basil

Instructions

  1. Cook sausage in 1 Tbsp hot oil in a large skillet over medium-high heat 4 minutes or until browned. Remove sausage from skillet.
  2. Cook zucchini, squash, onion, garlic powder, salt, and pepper in 2 Tbsp hot oil in same skillet 8 minutes or until browned and tender. Stir in sausage, tossing to combine. Sprinkle with basil.
