Skillet Sausage and Summer Squash
Mashed PotatoesIngredients
- 1 (14-oz) pkg smoked sausage, sliced
- 3 Tbsp olive oil, divided
- 2 zucchini, sliced
- 2 yellow squash, sliced
- 1 red onion, sliced
- ¾ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- ¼ cup chopped fresh basil
Instructions
- Cook sausage in 1 Tbsp hot oil in a large skillet over medium-high heat 4 minutes or until browned. Remove sausage from skillet.
- Cook zucchini, squash, onion, garlic powder, salt, and pepper in 2 Tbsp hot oil in same skillet 8 minutes or until browned and tender. Stir in sausage, tossing to combine. Sprinkle with basil.
