Ingredients

  • ⅓ cup mayonnaise
  • 2 Tbsp pesto
  • 1½ Tbsp lemon juice
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2½ cups chopped rotisserie chicken
  • ¾ cup grape tomatoes, quartered
  • 6 Tbsp diced peeled cucumber

Instructions

  1. Whisk together mayonnaise, pesto, lemon juice, salt, and pepper in a medium-size bowl. Add chicken, tomatoes, and cucumber; toss.
  2. Serve salad over Arugula with Lemon Dressing recipe, if desired.

  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • ¾ tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (10-oz) pkg baby arugula

Side Dish Instructions

  1. Whisk together oil, lemon juice, mustard, salt, and pepper in a small bowl. Toss arugula with dressing in a large bowl.
