Pesto Chicken Salad
Arugula with Lemon Dressing
Ingredients
- ⅓ cup mayonnaise
- 2 Tbsp pesto
- 1½ Tbsp lemon juice
- ⅛ tsp salt
- ⅛ tsp pepper
- 2½ cups chopped rotisserie chicken
- ¾ cup grape tomatoes, quartered
- 6 Tbsp diced peeled cucumber
Instructions
- Whisk together mayonnaise, pesto, lemon juice, salt, and pepper in a medium-size bowl. Add chicken, tomatoes, and cucumber; toss.
- Serve salad over Arugula with Lemon Dressing recipe, if desired.
Side Dish Ingredients
- 3 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- ¾ tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
- 1 (10-oz) pkg baby arugula
Side Dish Instructions
- Whisk together oil, lemon juice, mustard, salt, and pepper in a small bowl. Toss arugula with dressing in a large bowl.
