Ingredients
- 2 boneless pork loin chops
- 2 Tbsp grainy Dijon mustard
- 1 Tbsp raw honey
- 1 Tbsp balsamic vinegar
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 Tbsp olive oil
Instructions
- Cut pork chops in half lengthwise. Combine mustard, honey, and vinegar; divide into two portions. Brush one portion on one side of pork chops. Sprinkle pork with ⅛ tsp each salt and pepper.
- Cook pork, mustard side down, in hot oil in a large skillet over medium-high heat 2 minutes.
- Turn pork; brush with remaining portion of mustard mixture, and sprinkle with ⅛ tsp each salt and pepper. Cook 2 to 3 minutes or until done.

- 2 organic tomatoes, cut into wedges
- 1 (5-oz) pkg baby arugula
- ½ (8-oz) pkg small fresh mozzarella cheese balls (ciliegini)
- 2 Tbsp fresh basil leaves
- 1 clove garlic, minced
- 1 Tbsp balsamic vinegar
- 1 Tbsp olive oil
Side Dish Instructions
- Combine tomatoes, arugula, cheese, and basil in a bowl.
- Whisk together garlic, vinegar, and oil. Pour over salad, and toss.
