Sausage-Vegetable Egg Casserole
Pear-Strawberry SaladIngredients
- ½ (14-oz) pkg kielbasa sausage, cut into ½-inch pieces
- 1 cup sliced mushrooms
- 1 green bell pepper, chopped
- 1½ tsp olive oil
- 6 large eggs, lightly beaten
- ¼ tsp garlic powder
- ¼ tsp pepper
Instructions
- Preheat oven to 400°F. Cook kielbasa, mushrooms, and bell pepper in hot oil in a small ovenproof skillet over medium heat 5 minutes or until kielbasa is browned, stirring often. Remove from skillet.
- Whisk together eggs, garlic powder, and pepper in a bowl. Stir in kielbasa mixture. Pour into skillet.
- Bake 20 to 25 minutes or until set and beginning to brown.
Side Dish Ingredients
- 1½ tsp lemon juice
- 1½ tsp honey
- 1 cup sliced strawberries
- 1 pear, diced
Side Dish Instructions
- Whisk together lemon juice and honey in a bowl. Add strawberries and pear; toss.
