Sausage-Vegetable Egg Casserole

Ingredients

  • ½ (14-oz) pkg kielbasa sausage, cut into ½-inch pieces
  • 1 cup sliced mushrooms
  • 1 green bell pepper, chopped
  • 1½ tsp olive oil
  • 6 large eggs, lightly beaten
  • ¼ tsp garlic powder
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 400°F. Cook kielbasa, mushrooms, and bell pepper in hot oil in a small ovenproof skillet over medium heat 5 minutes or until kielbasa is browned, stirring often. Remove from skillet.
  2. Whisk together eggs, garlic powder, and pepper in a bowl. Stir in kielbasa mixture. Pour into skillet.
  3. Bake 20 to 25 minutes or until set and beginning to brown.

Side Dish Ingredients

  • 1½ tsp lemon juice
  • 1½ tsp honey
  • 1 cup sliced strawberries
  • 1 pear, diced

Side Dish Instructions

  1. Whisk together lemon juice and honey in a bowl. Add strawberries and pear; toss.
