Ingredients

  • ½ (32-oz) pkg frozen potato tots
  • ¾ lb ground beef
  • ½ (1-oz) envelope low-sodium taco seasoning mix
  • 2 Tbsp water
  • 1 cup shredded Mexican-blend cheese
  • ½ cup sour cream
  • ½ (8-oz) pkg shredded lettuce
  • 1 tomato, chopped

Instructions

  1. Bake potato tots according to package directions in a single layer on a rimmed baking sheet.
  2. Meanwhile, cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Add seasoning mix and water; cook until mixture is very thick.
  3. Spoon beef mixture over tots; sprinkle with cheese. Bake 10 minutes or until cheese is melted.
  4. Top with sour cream, lettuce, and tomato.
