Fried Chicken Salad

Ingredients

  • ½ (15-oz) pkg frozen lightly breaded chicken breast strips
  • 3 Tbsp barbecue sauce
  • 3 Tbsp refrigerated yogurt Ranch dressing
  • 1 head Bibb lettuce, torn (or use 3 [6-oz] pkg butter lettuce salad)
  • 1 Roma tomato, coarsely chopped
  • ⅓ cup sliced cucumber
  • ¼ cup shredded reduced-fat Cheddar cheese
  • 2 Tbsp chopped pecans
  • ¼ cup seasoned croutons

Instructions

  1. Cook chicken strips according to package directions. Cut into bite-size pieces.
  2. Stir together barbecue sauce and Ranch dressing; set aside.
  3. Toss together lettuce, tomato, cucumber, cheese, and nuts in a bowl; drizzle with dressing, and toss again.
  4. Add chicken and croutons; toss.
