Fried Chicken Salad

Ingredients
- ½ (15-oz) pkg frozen lightly breaded chicken breast strips
- 3 Tbsp barbecue sauce
- 3 Tbsp refrigerated yogurt Ranch dressing
- 1 head Bibb lettuce, torn (or use 3 [6-oz] pkg butter lettuce salad)
- 1 Roma tomato, coarsely chopped
- ⅓ cup sliced cucumber
- ¼ cup shredded reduced-fat Cheddar cheese
- 2 Tbsp chopped pecans
- ¼ cup seasoned croutons
Instructions
- Cook chicken strips according to package directions. Cut into bite-size pieces.
- Stir together barbecue sauce and Ranch dressing; set aside.
- Toss together lettuce, tomato, cucumber, cheese, and nuts in a bowl; drizzle with dressing, and toss again.
- Add chicken and croutons; toss.
