Ingredients

  • 3 Tbsp olive oil
  • 2 Tbsp chopped fresh rosemary (or use 2 Tbsp dried crushed rosemary)
  • 2 Tbsp jarred minced garlic
  • 1 tsp salt
  • ¾ tsp pepper
  • 2 lb pork tenderloins, cut into ¾-inch-thick slices

Instructions

  1. Combine oil, rosemary, garlic, salt, and pepper in a bowl. Flatten pork pieces using the heel of your hand; add to rosemary mixture. Toss with hands to coat.
  2. Preheat a grill pan or large nonstick skillet over medium-high heat. Cook pork, in batches, 2 minutes per side or until done. Sprinkle with additional rosemary, if desired.

Side Dish Ingredients

  • 3 large carrots
  • 1 (11-oz) pkg baby spinach
  • 1 cup crumbled feta cheese
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Shave carrots into thin ribbons using a vegetable peeler. Toss together carrots and remaining ingredients in a bowl. Season with salt and pepper, if desired.
