Ingredients

  • 1 lb cooked deli large shrimp
  • 2 Tbsp olive oil, divided
  • 1 (12-oz) pkg stir-fry vegetables (broccoli, carrots, and snow peas)
  • 1 red bell pepper, sliced
  • 1 Tbsp minced garlic
  • ½ (14-oz) bottle teriyaki sauce

Instructions

  1. Reheat shrimp in 1 Tbsp hot oil in a large skillet over medium-high heat 2 minutes or until browned. Remove from skillet, and keep warm.
  2. Add 1 Tbsp oil, vegetables, bell pepper, and garlic to skillet. Cover and cook 6 to 8 minutes or until tender, stirring occasionally, and adding 1 to 2 Tbsp water as needed to prevent sticking.
  3. Return shrimp to skillet. Stir in sauce; cook 2 minutes or until thoroughly heated. Serve over rice.

Side Dish Ingredients

  • 1 (3.5-oz) pouch boil-in-bag brown rice
  • 1 Tbsp toasted sesame seeds

Side Dish Instructions

  1. Cook rice according to package directions. Toss with sesame seeds in a bowl. Season with salt, if desired.
