Greek Tuna Steaks
Cucumber-Feta Orzo Salad
Ingredients
- 1 lb tuna steaks
- 2 tbsp olive oil, divided
- 1 tsp Greek seasoning
- 1 lemon, cut into wedges
Instructions
- Preheat grill to medium-high. Brush steaks all over with 1½ Tbsp oil; sprinkle all over with seasoning. Brush ½ Tbsp oil on cut sides of lemon.
- Grill fish, covered, 2 minutes per side or to desired doneness. Grill lemon, cut sides down, 2 to 3 minutes or until grill marks appear.
- Slice fish and serve with lemon.
Side Dish Ingredients
- ¾ cup orzo (preferably whole wheat)
- 2 Tbsp olive oil vinaigrette
- 1 tsp lemon zest
- ½ English cucumber, chopped
- ¼ cup crumbled feta cheese
- 2 Tbsp chopped fresh parsley
- 1 Tbsp chopped fresh dill
- ¼ tsp crushed red pepper
Side Dish Instructions
- Cook orzo according to package directions; drain and rinse under cold water to cool.
- Whisk together vinaigrette and lemon zest in a large bowl. Add orzo, cucumber, and remaining ingredients; toss.
