Greek Tuna Steaks

Cucumber-Feta Orzo Salad

Ingredients

  • 1 lb tuna steaks
  • 2 tbsp olive oil, divided
  • 1 tsp Greek seasoning
  • 1 lemon, cut into wedges

Instructions

  1. Preheat grill to medium-high. Brush steaks all over with 1½ Tbsp oil; sprinkle all over with seasoning. Brush ½ Tbsp oil on cut sides of lemon.
  2. Grill fish, covered, 2 minutes per side or to desired doneness. Grill lemon, cut sides down, 2 to 3 minutes or until grill marks appear.
  3. Slice fish and serve with lemon.

Side Dish Ingredients

  • ¾ cup orzo (preferably whole wheat)
  • 2 Tbsp olive oil vinaigrette
  • 1 tsp lemon zest
  • ½ English cucumber, chopped
  • ¼ cup crumbled feta cheese
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh dill
  • ¼ tsp crushed red pepper

Side Dish Instructions

  1. Cook orzo according to package directions; drain and rinse under cold water to cool.
  2. Whisk together vinaigrette and lemon zest in a large bowl. Add orzo, cucumber, and remaining ingredients; toss.
