Creamy Chicken Orzo

Easy Cucumber-Spring Mix Salad

Ingredients

  • ⅔ cup orzo
  • 1 Tbsp butter
  • ½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 small carrot, chopped
  • ⅓ cup finely chopped celery
  • 2 Tbsp all-purpose flour
  • 1 clove garlic, minced
  • ½ tsp dried thyme
  • ½ tsp onion powder
  • ¼ tsp pepper
  • ½ cup half-and-half
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, melt butter in a skillet over medium heat. Add chicken, carrot, and celery; cook 6 minutes or until chicken is done.
  3. Stir in flour, garlic, thyme, onion powder, and pepper. Cook over medium heat 2 minutes, stirring constantly.
  4. Slowly stir in half-and-half; cook until thickened. Stir in cheese until blended. Stir in pasta. Season with salt and pepper, if desired.

Side Dish Ingredients

  • 2 cups spring mix
  • ½ cup sliced English cucumber
  • 2 tsp olive oil
  • 2 tsp balsamic glaze (or use balsamic vinegar)
  • ¾ tsp Italian seasoning
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper

Side Dish Instructions

  1.  Toss together all ingredients in a medium-size bowl.
