Ingredients

  • 6 tostada shells
  • 1 (15.4-oz) can light in sodium vegetarian refried black beans
  • 2 Tbsp mayonnaise
  • 1 Tbsp lime juice
  • 1 tsp agave nectar
  • ¼ tsp ground chipotle chile pepper
  • 1½ cups angel hair coleslaw
  • 1 small mango, chopped
  • 1 avocado, chopped
  • 1 lime, cut into wedges

Instructions

  1. Heat tostada shells according to package directions.
  2. Meanwhile, heat beans according to package directions.
  3. Stir together mayonnaise, lime juice, agave, and chipotle pepper in a small bowl.
  4. Spread beans on tortillas. Top with slaw, mango, and avocado. Drizzle with mayonnaise mixture. Serve with lime wedges.

  • 1 (8.8-oz) pouch microwavable long-grain white rice
  • ½ (10-oz) pkg frozen corn kernels
  • ½ red bell pepper, diced
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ⅛ tsp ground coriander

Side Dish Instructions

  1. Cook rice and corn separately according to package directions.
  2. Cook bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in rice, corn, salt, and coriander.
