Pesto-Mozzarella Fried Chicken Salad

Ingredients
- 1 (25-oz) pkg frozen breaded crispy chicken strips (or use nuggets)
- 2 (8-oz) pkg fresh mozzarella cheese pearls
- 1 (6.2-oz) jar creamy pesto
- 3 Tbsp olive oil
- 1 (11-oz) pkg spring mix
- 1 pint medley cherry tomatoes
- 1 English cucumber, cut into half-moons
- 1 (0.5-oz) pkg fresh basil, leaves separated
- ¼ cup balsamic glaze
Instructions
- Bake chicken according to package directions for air fryer 11 to 12 minutes or 18 to 20 minutes in oven.
- Meanwhile, toss together cheese, pesto, and oil in a bowl; season with salt and pepper, if desired.
- Toss together spring mix, tomatoes, cucumber, marinated cheese, and basil in a large bowl. Add chicken; drizzle with glaze.
