Ingredients

  • 1 (25-oz) pkg frozen breaded crispy chicken strips (or use nuggets)
  • 2 (8-oz) pkg fresh mozzarella cheese pearls
  • 1 (6.2-oz) jar creamy pesto
  • 3 Tbsp olive oil
  • 1 (11-oz) pkg spring mix
  • 1 pint medley cherry tomatoes
  • 1 English cucumber, cut into half-moons
  • 1 (0.5-oz) pkg fresh basil, leaves separated
  • ¼ cup balsamic glaze

Instructions

  1. Bake chicken according to package directions for air fryer 11 to 12 minutes or 18 to 20 minutes in oven.
  2. Meanwhile, toss together cheese, pesto, and oil in a bowl; season with salt and pepper, if desired.
  3. Toss together spring mix, tomatoes, cucumber, marinated cheese, and basil in a large bowl. Add chicken; drizzle with glaze.
