Pesto Sauce Pork Tenderloin

Mashed Sweet Potatoes and Steamed Peas

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • 1 Tbsp olive oil
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup pesto

Instructions

  1. Preheat oven to 425°F. Sprinkle pork with salt and pepper, if desired. Brown pork on all sides in hot oil in a large ovenproof skillet over medium-high heat 4 minutes. Transfer skillet to oven.
  2. Bake 12 to 15 minutes or until a meat thermometer inserted into thickest portion reads 145°F. Let stand 3 minutes before slicing.
  3. Meanwhile, bring cream to a boil in a small saucepan over medium heat; reduce heat, and cook until thickened. Remove from heat; stir in cheese and pesto. Serve sauce with pork.

  • 2 lb sweet potatoes, peeled and cubed
  • ¼ cup butter
  • ½ tsp ground cinnamon
  • 1 (12-oz) pkg frozen green peas

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large saucepan over medium-high heat; reduce heat, and simmer 10 to 15 minutes until tender.
  2. Drain potatoes and return to pot; mash to desired consistency with butter and cinnamon. Season with salt and pepper, if desired.
  3. Steam peas according to package directions.
