Teriyaki Meatballs

Lo-Mein Noodles and Steamed Broccoli

Ingredients

  • 2 lb ground beef
  • ½ cup panko breadcrumbs
  • 2 large eggs
  • 1 tsp ground ginger
  • 2 Tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • 1 (14-oz) bottle teriyaki sauce

Instructions

  1. Preheat oven to 400°F. Stir together beef, breadcrumbs, eggs, ginger, soy sauce, and garlic powder in a large bowl. Shape mixture into 2-inch meatballs; place on a lightly greased wire rack set over a rimmed baking sheet.
  2. Bake meatballs 20 minutes or until no longer pink in centers.
  3. Meanwhile, heat teriyaki sauce in a large skillet over medium-low heat. Add meatballs; stirring to coat with sauce.

  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Cook noodles according to package directions. Steam broccoli according to package directions; season with salt and pepper, if desired.
