Easy Chipotle Shrimp

Ingredients
- 2 Tbsp fresh lime juice
- 1 Tbsp honey
- 1 tsp ground chipotle chile pepper
- 1½ lb peeled and deveined, large raw shrimp
- 2 Tbsp olive oil
Instructions
- Whisk together lime juice, honey, and chipotle pepper in a large bowl. Add shrimp, and toss.
- Cook shrimp in hot oil in a large skillet over medium-high heat 3 to 5 minutes or until shrimp turn pink. Serve shrimp over Chipotle Ranch Salad recipe.

- ½ cup organic Ranch dressing
- 1 tsp ground chipotle chile pepper
- 9 cups chopped romaine lettuce
- 1 small cucumber, sliced
- 2 organic tomatoes, chopped
- 2 avocados, sliced
Side Dish Instructions
- Whisk together dressing and chipotle pepper in a small bowl. Add lettuce, cucumber, tomatoes, and avocado; toss.
