Ingredients
- ½ red bell pepper, thinly sliced
- ½ cup thinly sliced onion
- 1 clove garlic, minced
- 2 tsp olive oil
- 1¼ cups canned diced tomatoes
- ¾ tsp smoked paprika (or use regular)
- Dash of cayenne pepper
- 2 (6-oz) salmon fillets
- ¼ cup crumbled feta cheese
- Fresh basil leaves (optional)
Instructions
- Sauté bell pepper, onion, and garlic in hot oil in a skillet over medium-high heat 5 to 7 minutes or until fragrant. Stir in tomatoes, paprika, and cayenne pepper.
- Season salmon with salt and pepper, if desired; arrange in tomato mixture in skillet.
- Cover and cook 3 minutes. Reduce heat to medium; cover and cook 10 to 15 minutes or until fish flakes with a fork. Sprinkle with cheese and, if desired, basil.

- ½ cup whole wheat couscous
- 2 Tbsp finely chopped fresh basil
- 1 tsp olive oil
- 1 clove garlic, minced
- ⅛ tsp kosher salt
- ⅛ tsp pepper
Side Dish Instructions
- Cook couscous according to package directions; toss with remaining ingredients in a bowl.
