Ingredients

  • ½ red bell pepper, thinly sliced
  • ½ cup thinly sliced onion
  • 1 clove garlic, minced
  • 2 tsp olive oil
  • 1¼ cups canned diced tomatoes
  • ¾ tsp smoked paprika (or use regular)
  • Dash of cayenne pepper
  • 2 (6-oz) salmon fillets
  • ¼ cup crumbled feta cheese
  • Fresh basil leaves (optional)

Instructions

  1. Sauté bell pepper, onion, and garlic in hot oil in a skillet over medium-high heat 5 to 7 minutes or until fragrant. Stir in tomatoes, paprika, and cayenne pepper.
  2. Season salmon with salt and pepper, if desired; arrange in tomato mixture in skillet.
  3. Cover and cook 3 minutes. Reduce heat to medium; cover and cook 10 to 15 minutes or until fish flakes with a fork. Sprinkle with cheese and, if desired, basil.

  • ½ cup whole wheat couscous
  • 2 Tbsp finely chopped fresh basil
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions; toss with remaining ingredients in a bowl.
