Chili-Cheese Sweet Potato Fries

Ingredients

  • 1 (22-oz) pkg frozen gluten-free sweet potato waffle fries
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (15-oz) can gluten-free chili (with or without beans)
  • 1½ cups shredded Cheddar cheese
  • ½ cup sour cream
  • 2 green onions, thinly sliced

Instructions

  1. Preheat oven to 450°F. Toss fries with oil, salt, and pepper on a large rimmed baking sheet; spread in a single layer. Bake 20 to 22 minutes or until crisp.
  2. Meanwhile, cook chili in a small saucepan over medium heat 3 to 5 minutes or until thoroughly heated.
  3. Divide fries among 6 plates; top each with chili, cheese, and sour cream. Sprinkle with green onions.
