Sweet Potato and Ground Chicken Hash

Ingredients

  • 2 (12-oz) pkg peeled and diced sweet potatoes
  • 3 Tbsp olive oil, divided
  • 1 lb ground chicken (or use ground turkey)
  • 1 red bell pepper, diced
  • 1 Tbsp chopped fresh rosemary (or use 1 tsp dried crushed rosemary)
  • 1 tsp smoked paprika
  • ½ tsp salt
  • 2 (5-oz) pkg baby spinach
  • 6 large eggs
  • ½ tsp pepper

Instructions

  1. Cook potatoes, covered, in 2 Tbsp hot oil in a large skillet, without stirring, 6 to 8 minutes. Stir and cook, covered, 6 to 8 minutes or until browned. Remove potatoes from skillet.
  2. Cook chicken and bell pepper in same skillet 5 to 6 minutes or until browned and crumbly. Stir in potatoes, rosemary, paprika, and salt. Gradually add spinach; cook 3 to 4 minutes or until spinach wilts.
  3. Meanwhile, heat 1 Tbsp oil in another large nonstick skillet over medium heat. Crack eggs into skillet; sprinkle with pepper. Cook 2 to 3 minutes or until whites are set and yolks are cooked to desired doneness.
  4. Divide hash among 6 plates; top with eggs.

Side Dish Ingredients

  • 1 (16-oz) container watermelon spears
  • 1 (4-oz) pkg blueberries
  • 2 Tbsp honey
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Cut watermelon into chunks. Toss together melon and remaining ingredients in a bowl.
