Herbed Shrimp

Parmesan Mashed Potatoes and Roasted Green Beans

Ingredients

  • 1½ lb peeled and deveined, large raw shrimp
  • ½ tsp salt
  • ¼ tsp crushed red pepper
  • 5 Tbsp olive oil, divided
  • 1 cup chopped fresh parsley
  • 3 Tbsp minced garlic
  • 2 Tbsp white wine vinegar

Instructions

  1. Sprinkle shrimp with salt and red pepper. Cook shrimp in 2 Tbsp hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until shrimp turn pink.
  2. Add parsley, 3 Tbsp oil, garlic, and vinegar, tossing to coat shrimp. Cook 2 minutes or until thoroughly heated.

  • 2 (12-oz) pkg green beans
  • 5 Tbsp olive oil, divided
  • ½ tsp salt, divided
  • 1½ lb red potatoes, cubed
  • ¾ cup freshly grated Parmesan cheese
  • 1½ tsp Italian seasoning

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together green beans, 2 Tbsp oil, and ¼ tsp salt on a large rimmed baking sheet; spread in a single layer.
  2. Bake 15 to 20 minutes or until browned and tender, stirring halfway through baking.
  3. Meanwhile, bring potatoes and water to cover to a boil in a saucepan. Cook 5 minutes or until potatoes are fork tender; drain.
  4. Return potatoes to pan; add cheese, 3 Tbsp oil, Italian seasoning, and ¼ tsp salt, and cook until thoroughly heated, mashing potatoes with a potato masher to desired consistency.
