Cheesy Ranch Meatballs

Ingredients

  • 2 lb ground beef
  • ½ cup panko breadcrumbs
  • 1 (1-oz) envelope Ranch dressing mix
  • 1 large egg, lightly beaten
  • ½ (8-oz) block colby-Jack cheese
  • 2 Tbsp finely chopped fresh parsley
  • 1 cup Ranch dressing

Instructions

  1. Preheat oven to 400°F. Stir together beef, breadcrumbs, dressing mix, and beaten egg in a large bowl.
  2. Cut cheese into 20 (½-inch) cubes. Divide beef mixture into 20 portions.
  3. Shape each beef portion around 1 cheese cube, completely enclosing cheese, to form a meatball.
  4. Place meatballs on a lightly greased rack on a rimmed baking sheet. Bake 25 to 30 minutes or until meat is no longer pink. Sprinkle with parsley, and serve with dressing for dipping.
