Mediterranean Pasta Salad
Garlic BreadIngredients
- 12 oz bow-tie pasta (or use rotini or penne)
- ¾ cup olive oil vinaigrette
- 3 Tbsp lemon juice
- 2 (15-oz) cans chickpeas, drained and rinsed
- 1 pint grape tomatoes, halved
- 2 cucumbers, cut into half-moons
- 1 cup sliced green olives
- ¾ cup sliced green onions
- 1 (5-oz) pkg crumbled feta cheese
Instructions
- Cook pasta according to package directions. Rinse under cold water to cool.
- Meanwhile, whisk together vinaigrette and lemon juice in a large bowl. Add pasta, chickpeas, tomatoes, cucumber, olives, green onions, and cheese, tossing to coat.
- Chill until ready to serve.
Side Dish Ingredients
- ½ (14-oz) loaf French bread
- 3 Tbsp butter, softened
- 2 tsp garlic powder
Side Dish Instructions
- Preheat oven to 450°F. Cut bread in half lengthwise; place on a baking sheet.
- Spread butter on bread; sprinkle with garlic powder. Bake 8 to 10 minutes or until toasted.
