Mediterranean Pasta Salad

Ingredients

  • 12 oz bow-tie pasta (or use rotini or penne)
  • ¾ cup olive oil vinaigrette
  • 3 Tbsp lemon juice
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 1 pint grape tomatoes, halved
  • 2 cucumbers, cut into half-moons
  • 1 cup sliced green olives
  • ¾ cup sliced green onions
  • 1 (5-oz) pkg crumbled feta cheese

Instructions

  1. Cook pasta according to package directions. Rinse under cold water to cool.
  2. Meanwhile, whisk together vinaigrette and lemon juice in a large bowl. Add pasta, chickpeas, tomatoes, cucumber, olives, green onions, and cheese, tossing to coat.
  3. Chill until ready to serve.

Side Dish Ingredients

  • ½ (14-oz) loaf French bread
  • 3 Tbsp butter, softened
  • 2 tsp garlic powder

Side Dish Instructions

  1. Preheat oven to 450°F. Cut bread in half lengthwise; place on a baking sheet.
  2. Spread butter on bread; sprinkle with garlic powder. Bake 8 to 10 minutes or until toasted.
