Apricot-Dijon Chicken
Green Onion Couscous and Broccoli
Ingredients
- ½ lb boneless, skinless chicken thighs
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp olive oil
- ⅓ cup apricot preserves (or use peach preserves)
- 2 tsp Dijon mustard
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a skillet over medium-high heat 5 minutes per side or until done.
- Stir together preserves and mustard; add to skillet with chicken. Reduce heat to medium; cook 2 to 3 minutes or until sauce is thoroughly heated, turning to coat chicken.

- ½ cup couscous
- 1 Tbsp olive oil
- 1 green onion, thinly sliced
- 1½ cups frozen broccoli florets
- ¼ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook couscous according to package directions. Stir in oil and onion.
- Cook broccoli according to package directions. Stir in Italian seasoning, salt, and pepper.
