Ingredients

  • 3 lb ground pork
  • 3 tsp fresh rosemary, chopped
  • 3 tsp garlic, minced
  • 3 tsp Dijon mustard
  • 6 slices Swiss cheese
  • 6 Tbsp mayonnaise
  • 3 tsp truffle oil
  • 6 large eggs
  • 2 cups baby arugula
  • 6 Brioche buns

Instructions

  1. Mix together ground pork, rosemary, garlic and mustard gently until combined. Gently form into 6 (8-oz) patties, sprinkling with salt and pepper on each side.
  2. Preheat a grill to medium-high heat. Grill until pork is cooked to an internal temperature of 160˚F. Top with cheese and move to indirect heat just to melt.
  3. Mix together mayonnaise, truffle oil, salt and pepper.
  4. Heat a skillet to medium high heat, Reduce pan to medium heat, and fry the eggs. Cover the eggs with a lid to cook the white through, keeping the yolk intact, cooking for about 4 minutes.
  5. Lay arugula onto the bottom bun, top with the burger, then add the fried egg and spread truffle mayonnaise onto the top bun.
