Ground Turkey Ragu
Roasted Eggplant Rounds
Ingredients
- 1½ lb ground turkey
- 1 onion, chopped (or use frozen chopped)
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 1 Tbsp Italian seasoning
- 1 tsp salt
- ¼ tsp crushed red pepper
- 1 (28-oz) can crushed tomatoes
- ½ cup red wine (or use chicken broth)
- Fresh thyme leaves (optional)
Instructions
- Cook turkey, onion, and garlic in hot oil in a large skillet over medium heat until turkey is browned and crumbly. Stir in Italian seasoning, salt, red pepper, tomatoes, and wine.
- Simmer 10 minutes or until thickened. Spoon ragu over Roasted Eggplant Rounds recipe, and, if desired, sprinkle with thyme.
Side Dish Ingredients
- 3 eggplants, cut crosswise into ½-inch-thick slices
- 3 Tbsp olive oil
- 1 clove garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 1½ Tbsp balsamic vinegar
Side Dish Instructions
- Preheat oven to 475°F. Toss together eggplant slices, oil, garlic, salt, and pepper; spread in a single layer on 2 large rimmed baking sheets.
- Bake 25 to 30 minutes or until browned and tender, turning once halfway through cooking. Drizzle with vinegar.
