Ground Turkey Ragu

Ingredients

  • 1½ lb ground turkey
  • 1 onion, chopped (or use frozen chopped)
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • 1 tsp salt
  • ¼ tsp crushed red pepper
  • 1 (28-oz) can crushed tomatoes
  • ½ cup red wine (or use chicken broth)
  • Fresh thyme leaves (optional)

Instructions

  1. Cook turkey, onion, and garlic in hot oil in a large skillet over medium heat until turkey is browned and crumbly. Stir in Italian seasoning, salt, red pepper, tomatoes, and wine.
  2. Simmer 10 minutes or until thickened. Spoon ragu over Roasted Eggplant Rounds recipe, and, if desired, sprinkle with thyme.

  • 3 eggplants, cut crosswise into ½-inch-thick slices
  • 3 Tbsp olive oil
  • 1 clove garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ Tbsp balsamic vinegar

Side Dish Instructions

  1. Preheat oven to 475°F. Toss together eggplant slices, oil, garlic, salt, and pepper; spread in a single layer on 2 large rimmed baking sheets.
  2. Bake 25 to 30 minutes or until browned and tender, turning once halfway through cooking. Drizzle with vinegar.
