Seared Steak with Summer Squash and Kale

Ingredients
- 2 lb top sirloin steak
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 3 Tbsp olive oil
- 4 cloves garlic, minced
- 1 (1½-lb) pkg sliced zucchini, yellow squash, and onion medley
- 1 (5-oz) pkg baby kale
- ½ cup freshly grated Parmesan cheese
Instructions
- Sprinkle steak with ½ tsp each salt and pepper. Cook steak in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or to desired doneness. Remove from skillet.
- Add garlic to skillet; cook 30 seconds or until fragrant. Add squash medley; cook 4 to 5 minutes or until crisp-tender. Stir in kale and ½ tsp each salt and pepper; cook 1 to 2 minutes or until wilted. Sprinkle with cheese.
- Slice steak across the grain. Serve squash mixture with steak.

- 1 (24-oz) bag fingerling potatoes
- 3 Tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp lemon zest
- 1 Tbsp fresh lemon juice
Side Dish Instructions
- Preheat oven to 425°F; place a large rimmed baking sheet in oven while preheating.
- Toss together potatoes, oil, salt, and pepper in a bowl. Arrange in a single layer on baking sheet. Bake 20 minutes or until crisp.
- Transfer potatoes to a bowl. Add lemon zest and juice; toss.
