Ingredients

  • 2 lb top sirloin steak
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 3 Tbsp olive oil
  • 4 cloves garlic, minced
  • 1 (1½-lb) pkg sliced zucchini, yellow squash, and onion medley
  • 1 (5-oz) pkg baby kale
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Sprinkle steak with ½ tsp each salt and pepper. Cook steak in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or to desired doneness. Remove from skillet.
  2. Add garlic to skillet; cook 30 seconds or until fragrant. Add squash medley; cook 4 to 5 minutes or until crisp-tender. Stir in kale and ½ tsp each salt and pepper; cook 1 to 2 minutes or until wilted. Sprinkle with cheese.
  3. Slice steak across the grain. Serve squash mixture with steak.

  • 1 (24-oz) bag fingerling potatoes
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp lemon zest
  • 1 Tbsp fresh lemon juice

Side Dish Instructions

  1. Preheat oven to 425°F; place a large rimmed baking sheet in oven while preheating.
  2. Toss together potatoes, oil, salt, and pepper in a bowl. Arrange in a single layer on baking sheet. Bake 20 minutes or until crisp.
  3. Transfer potatoes to a bowl. Add lemon zest and juice; toss.
