Lowcountry Sausage and Shrimp Skillet

Ingredients

  • ½ (14-oz) pkg smoked turkey sausage, sliced
  • ½ onion, chopped
  • 1 small yellow bell pepper, chopped
  • 1 small red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1½ tsp olive oil
  • 1 zucchini, halved lengthwise and sliced
  • 1 cup fire-roasted diced tomatoes
  • ½ cup low-sodium chicken broth
  • ½ lb peeled and deveined, large raw shrimp

Instructions

  1. Sauté sausage, onion, bell peppers, and garlic in hot oil in a deep skillet over medium heat 5 minutes or until sausage is browned and peppers are just tender.
  2. Add zucchini, tomatoes, and broth; bring to a boil, reduce heat, and simmer, stirring occasionally, 5 minutes.
  3. Add shrimp; cook 2 to 3 minutes per side or until shrimp turn pink.

Side Dish Ingredients

  • ½ (20-oz) pkg frozen mashed cauliflower
  • 6 Tbsp shredded sharp Cheddar cheese
  • 1 green onion, chopped
  • ½ Tbsp butter

Side Dish Instructions

  1. Microwave cauliflower according to package directions. Stir in cheese, onion, and butter.
