Lowcountry Sausage and Shrimp Skillet
Cheesy Cauliflower MashIngredients
- ½ (14-oz) pkg smoked turkey sausage, sliced
- ½ onion, chopped
- 1 small yellow bell pepper, chopped
- 1 small red bell pepper, chopped
- 2 cloves garlic, minced
- 1½ tsp olive oil
- 1 zucchini, halved lengthwise and sliced
- 1 cup fire-roasted diced tomatoes
- ½ cup low-sodium chicken broth
- ½ lb peeled and deveined, large raw shrimp
Instructions
- Sauté sausage, onion, bell peppers, and garlic in hot oil in a deep skillet over medium heat 5 minutes or until sausage is browned and peppers are just tender.
- Add zucchini, tomatoes, and broth; bring to a boil, reduce heat, and simmer, stirring occasionally, 5 minutes.
- Add shrimp; cook 2 to 3 minutes per side or until shrimp turn pink.
Side Dish Ingredients
- ½ (20-oz) pkg frozen mashed cauliflower
- 6 Tbsp shredded sharp Cheddar cheese
- 1 green onion, chopped
- ½ Tbsp butter
Side Dish Instructions
- Microwave cauliflower according to package directions. Stir in cheese, onion, and butter.
