Cheesy Beef and Spinach Casserole

Ingredients
- 1¼ lb ground beef
- 1 onion, chopped
- 1 (8-oz) pkg sliced mushrooms
- 2 cups shredded whole-milk mozzarella cheese, divided
- ⅔ cup freshly grated Parmesan cheese, divided
- 1 (5-oz) pkg baby spinach, coarsely chopped
- 2 large eggs, beaten
- ½ tsp garlic powder
- ¼ tsp salt
Instructions
- Preheat oven to 375°F. Cook beef, onion, and mushrooms in a large skillet over medium heat 8 minutes or until browned and crumbly.
- Combine 1¼ cups mozzarella, ⅓ cup Parmesan, spinach, eggs, garlic powder, and salt; stir in beef mixture.
- Spoon into a lightly greased 11- x 7-inch baking dish. Bake, uncovered, 20 minutes.
- Sprinkle with ¾ cup mozzarella and ⅓ cup Parmesan. Bake 10 minutes longer or until cheese is melted.

- 2 Tbsp butter
- ½ tsp pepper
