Ingredients

  • 1¼ lb ground beef
  • 1 onion, chopped
  • 1 (8-oz) pkg sliced mushrooms
  • 2 cups shredded whole-milk mozzarella cheese, divided
  • ⅔ cup freshly grated Parmesan cheese, divided
  • 1 (5-oz) pkg baby spinach, coarsely chopped
  • 2 large eggs, beaten
  • ½ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Preheat oven to 375°F. Cook beef, onion, and mushrooms in a large skillet over medium heat 8 minutes or until browned and crumbly.
  2. Combine 1¼ cups mozzarella, ⅓ cup Parmesan, spinach, eggs, garlic powder, and salt; stir in beef mixture.
  3. Spoon into a lightly greased 11- x 7-inch baking dish. Bake, uncovered, 20 minutes.
  4. Sprinkle with ¾ cup mozzarella and ⅓ cup Parmesan. Bake 10 minutes longer or until cheese is melted.

  • 2 (12-oz) pkg frozen mashed cauliflower
  • 2 Tbsp butter
  • ½ tsp pepper

Side Dish Instructions

  1. Cook mashed cauliflower according to package directions.
  2. Toss together cauliflower and butter in a bowl; sprinkle with pepper.
