Chicken and Rice Broccoli Bake

Ingredients

  • 1 cup long-grain brown rice
  • 3 boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 (12-oz) pkg broccoli florets
  • 1½ cups chopped onion
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • 1½ cups shredded Cheddar cheese
  • ½ tsp salt
  • ½ tsp freshly ground pepper

Instructions

  1. Preheat oven to 400°F. Cook rice according to package directions.
  2. Drizzle chicken with oil in a lightly greased baking dish. Bake 25 minutes or until done. Cool and shred chicken.
  3. Meanwhile, microwave broccoli according to package directions.
  4. Stir together rice, broccoli, chicken, onion, broth, sour cream, 1 cup cheese, salt, and pepper. Spoon into a lightly greased 13- x 9-inch baking dish; sprinkle with ½ cup cheese.
  5. Bake 20 minutes or until bubbly.

Side Dish Ingredients

  • 3 organic peaches, sliced (or use 4 nectarines)
  • 1 pint blueberries, rinsed and well chilled

  1. Combine peaches and berries in a bowl.
