Wasa Multigrain Crispbread

Ingredients

  • 1 (1-lb) salmon filet
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 head green leaf lettuce, chopped
  • 1 pint cherry tomatoes (preferably multicolored), halved
  • 4 hard-cooked eggs, quartered
  • 1 small avocado, sliced
  • ¼ cup crumbled bacon
  • ¼ cup crumbled reduced-fat blue cheese
  • ¼ cup chopped green onions
  • ¼ cup green goddess dressing

Instructions

  1. Preheat broiler. Sprinkle fish with salt and pepper on a greased broiler pan; lightly coat with cooking spray. Broil 9 to 10 minutes or until fish flakes with a fork; break into large pieces.
  2. Divide lettuce among 4 plates; top with tomatoes, eggs, avocado, bacon, cheese, and onions. Drizzle with dressing.
