Ingredients
- 1 (1-lb) salmon filet
- ¼ tsp salt
- ¼ tsp pepper
- 1 head green leaf lettuce, chopped
- 1 pint cherry tomatoes (preferably multicolored), halved
- 4 hard-cooked eggs, quartered
- 1 small avocado, sliced
- ¼ cup crumbled bacon
- ¼ cup crumbled reduced-fat blue cheese
- ¼ cup chopped green onions
- ¼ cup green goddess dressing
Instructions
- Preheat broiler. Sprinkle fish with salt and pepper on a greased broiler pan; lightly coat with cooking spray. Broil 9 to 10 minutes or until fish flakes with a fork; break into large pieces.
- Divide lettuce among 4 plates; top with tomatoes, eggs, avocado, bacon, cheese, and onions. Drizzle with dressing.
