Farmer's Market Breakfast Bowls

Ingredients
- 1 (16-oz) pkg cubed sweet potatoes
- 1 Tbsp plus 1 tsp olive oil, divided
- ½ tsp garlic salt
- ½ tsp pepper
- 4 large eggs
- 1 pint multicolored cherry tomatoes, halved
- 6 radishes, thinly sliced
- 1 small avocado, sliced
- ½ cup crumbled goat cheese
- ¼ cup fresh basil leaves (or use your favorite herb)
Instructions
- Preheat oven to 425°F. Toss together potatoes and 1 Tbsp oil on a rimmed baking sheet; spread in a single layer, and season with garlic salt and pepper. Bake 20 to 25 minutes or until browned and tender.
- Meanwhile, heat 1 tsp oil in a nonstick skillet over medium heat; crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness.
- Divide potatoes, tomatoes, radishes, eggs, and avocado among 4 bowls. Sprinkle with cheese and basil.
